This Carrot cake recipe from Woman's Weekly turned out very well, it is made with vegetable oil, eggs, dark brown sugar, wholemeal flour, raisins, mixed spice walnuts, orange and of course carrots. I used a cream cheese flavoured buttercream to decorated the cake after glazing the top with a little orange marmalade. I also used chopped and walnut halves along with sugar paste carrot decorations and orange zest. All in all a very nice cake.
