Christmas GF Coffee and Walnut cake for the Gardening volunteers - Friday 22nd December 2023

So I think this just about wraps up my baking for the year, I've made a GF coffee and walnut cake for the gardening volunteers when we get together tomorrow morning. As well as roasting the walnuts, half the quantity are also ground with the flour which I am hoping will give a really nutty flavour. The coffee and walnut sponge is brushed with a coffee syrup and then topped with coffee buttercream. I combined two recipes - the GF sponge and syrup from a Sainsbury magazine recipe and the buttercream is a Mary Berry from her book Fast Cakes. I've divided the cake into 24 individual pieces and decorated with a mixture of gilded walnut halves and Christmas sugar paste decorations. I'm hoping that it will have a real coffee kick.
