Another day when I felt the need to do a bit of baking. I made a ginger cake with a triple hit of ginger, grated fresh ginger, chopped preserved ginger and powdered ginger. The recipe is one of Delia's and it never fails. Once cooked the cake is topped with a lemon glace icing, which provides a very nice contrast to the ginger, and finished with a piece of preserved ginger, I also added a lemon jelly segment and a mini lemon meringue. Highly recommended.
