Homemade raisin and oat cookies - Tuesday 4th March

Nothing better than a home made cookie to enjoy with your morning coffee or afternoon tea, these are made using a Jane's Patisserie recipe, you can tweak the recipe if you are not fond of raisins to use choc chips instead and I was wondering about fudge chunks to give a kind of salted caramel vibe. I'll have to test that theory over the next few weeks. I baked the cookies for longer than 10 - 12 mins recommended, I left my batch in the oven for about 20 mins so that the outer was lovely and crunchy but you still get a nice chewy middle. Each cookie weighs 85 gms and you get 11 - 12 from a batch of dough. I would recommend giving this a go. Enjoy!
