Ice cream cone cupcakes for a sunny Sunday afternoon - 13th July

We had been invited for a Sunday lunch-time bbq to get together with a group of old friends. The weather was just perfect. I took along some ice cream cone cupcakes, after a bit of searching around I found the flat bottom cone cups that I was looking for in Sainsburys. The cones were filled with a layered sponge mix. The mix was divided into 3, one 1/3 was flavoured with cocoa, the second was coloured pink and I added some dried raspberry pieces to the mix and the final third was coloured yellow. Before I started layering the sponge I put a small square of chocolate in the bottom of each wafer cup, followed by the sponge mix. Once the cupcakes were cooked and cooled I cored out the centres and added a tea spoon of raspberry conserve. Finally the cupcakes were given the '99' treatment with a swirl of vanilla buttercream, a chocolate flake and a few sprinkles. When serving we also added strawberry and chocolate ice cream sauce. They were worth all the effort.
