I've added a few more pictures from the Macmillan coffee morning. As well as the coffee traybake cake I made the ginger cake I tried out a few weeks ago and also the whole orange gf cake I had made recently. The three cakes were cut up and provided to the people who donated at our coffee morning with a mug of tea or coffee. For the stall that I ran I also baked rock cakes - another Mary Berry recipe - which has a mixture of currants, sultanas and apricots - they are always very popular. I also made mini vanilla cupcakes which I filled with raspberry conserve, piped with vanilla buttercream to which I had added some light cream cheese and I used vanilla paste rather than extract. I had decorated tiny little egg boxes so that I could sell boxes of 4 mini cupcakes, these are always popular for gifts. Finally I made sugar cookies cut with a mandala cutter and also tea cups and teapots the cookies were brushed with lemon curd to act as glue and then topped with coloured and painted sugar paste. I also had some knitted and crocheted items to sell. We had a very successful morning making over £500 from sales and donations with more money promised.
