Special Ginger cake to share - Friday 30th May

I had been asked to make a sharing cake for the volunteer gardeners that I sometimes work with as a Thank you from one of the team. I used a Delia Smith recipe which includes a triple hit of ginger - ground, fresh and preserved - along with black treacle, ground almonds, brown sugar and I also added some lemon juice for good measure. The result is a lovely gingery cake with a shiny top which I decorated with drizzled lemon glace icing, chopped preserved ginger, lemon jellies and a Thank you message.
The cake quickly disappeared with a cup of tea after a couple of hours gardening on Friday morning.
