VJ day cookies for Banstead RBL Veteran's Hub - Wednesday 30th July

I made a batch of circular shaped sugar cookies using the no-spread recipe from Marion Frost/Karen Davies, I added a thin layer of strawberry jam and then topped the cookies with a stamped sugar paste disc imprinted with VJ 80. I used was red, white and blue coloured sugar paste which I then topped with a potato starch printed disc for VJ day 80 (I used a mix of edible glue and icing sugar & water to fix the discs to the sugar paste).

It was a little early really for VJ day, the commemoration date isn't until 15th August, but I took the cookies to an event for the Banstead RBL Veteran's Hub to share with the veterans when we visited Gatwick Aviation Museum in Charlwood.
