Weekend bake, Toffee and banana loaf, Saturday 13th April 2024

My pet hate is having to throw away the last couple of bananas in the fruit bowl so I decided to use them to make a toffee and banana loaf cake. I used a banana loaf recipe as the base and added some M&S fudge chips to the mix along with chopped chocolate and hazelnut truffles. Once baked and cooled I drizzled the top of the loaf cake with melted Bournville chocolate and then scattered some salted caramel creams on top.

The cake tasted perfect with a cup of tea and there are a few slices in the freezer to enjoy another day.
