Cakes for Gardeners get together on a Summer evening - 11th July

The volunteer gardening group that I belong had decided to have a bit of a catch-up which just happened to coincide with the wonderful weather we have been enjoying, we met in one of our volunteer's beautiful gardens. The sun was scorchio so after a few drinks and some very appetising savoury nibbles we finished with a piece of cake. On offer was an Apricot crumble cake made using the recipe from a Waitrose recipe card, the recipe was actually for a gooseberry cake but as a I had fresh apricots I swapped the fruit element. A vanilla sponge mixture is topped with the chopped fruit and then finally a crumble mix containing pecan nuts and I used demerara sugar to provide a bit more crunch. I decorated the cake with an apricot and some sugarpaste leaves. I also made a lemon drizzle traybake cake. I called it a tripple lemon cake as the sponge contained lemon zest and lemon curd, once cooked the cake was topped with a drizzle mix of the juice of 2 lemons and granulated sugar and finally I added some lemon glace icing and lemon sugar sprinkles. Both cakes were enjoyed by all.
