Cherry Traybake - Monday 22nd January 2024

I've made a Cherry traybake today for the police team in Reigate to have with their tea and coffee tomorrow. The sponge has ground almonds added along with glace cherries. Once cooled the sponge is brushed with jam (I used raspberry to give a bakewell vibe), topped with a sheet of fondant icing and decorated with marzipan cherries. The marzipan is coloured red and green, rolled into strips which are placed side by side and then with a cherry embosser and cutter the shapes are cut out and allowed to dry before using as decorations. I've cut the traybake into squares so that it is easy to serve and used a foil tray topped with a rectangular doily to hold the sponge which I've then popped into a cupcake box.
