Christmas cake baked - Tick - 9th October

I saw a recipe for a Christmas cake posted on my current favourite baking site - Jane's Patisserie - and thought that I would give it a go. It's basically a boiled fruit cake with a lot of dried fruit soaked overnight in a mixture of tea, fruit juice and brandy.

The cake cooked in 2 hours and after feeding with a little more brandy was left to cool before wrapping and storing in a tin until feeding again - I think I'll probably do this on a monthly basis until just before Christmas when I'll decorate the cake.
