I decided to bake our Christmas cake today, I used the same recipe as last year as it was a great success, the recipe was from Jane's Patisserie, I'd assembled all of the ingredients, so after melting the butter, sugar, treacle, lemon juice, zest and tea soaked dried fruit together I added the eggs and dry ingredients including warming spices and then spooned the mixture into the prepared tin and cooked the cake at a low heat for a couple of hours. There was a beautiful smell throughout the house as the cake came out of the oven. The cake has been fed with brandy and once cooled it has been wrapped ready for a regular feed and resting before moving onto the decoration phase. More details to follow.
