I found this lovely recipe in a Woman's Weekly magazine and knowing that we were due to be getting together with friends on 18th July and that a GF recipe might be appreciated I decided to bake the cake. Two oranges are chopped and blitzed in a food processor then mixed with eggs, oil, ground almonds and polenta into a batter and baked for just over an hour (mine actually needed 1hr 15 mins). As soon as the cake is taken out of the oven you prick the top and then tip on 150 ml of fresh orange juice mixed with 50 gms of sugar. The cake is then left to cool. I also made the candied orange slices to decorate the cake by slicing an orange thinly and then boiling with water and sugar for 30 mins. So far so good you might think and the cake did look lovely. However, by Thursday morning my partner had covid so no outing. Not all bad though, we've treated ourselves to the odd slice of cake and the rest has been frozen for another day.
