In the middle of the May Queen Season and what could be a better way to celebrate than with a lovely Funfetti cupcake filled with strawberry conserve and topped with beautifully light vanilla buttercream.

I made these cupcakes for The Coffee House in Tadworth to celebrate the May Queen Pageant on Saturday 18th May at Walton on the Hill. There was a bit of a fairy tail theme going on with these cakes, the May Queen's carriage, the Tiara / Crown, Crystal slippers all used to decorate the very pretty Funfetti cupcakes. I used a Jane's Patisserie recipe for the cupcakes and buttercream and various cutters and moulds to make all the decorations using brightly coloured sugar paste. Very pleased with the finished result. There were a few cakes spare so just had to try one, they definitely get the thumbs up from me.

Let's hope the sun shines for the Pageants on Saturday.
